Québec-Style Yellow Split Pea Soup
Make an authentic (and healthy) French Canadian Pea Soup from simple ingredients

- Vegetable peeler
- Cutting board
- Kitchen knife
- Electric frying pan
- Measuring cup(s) or scale
- Stirring spoon
Ingredients
Main ingredients
- 1.5 tbsp ghee (ca. 21g; or butter, if preferred)
- 2 carrots (ca. 276g)
- 1 medium onion (ca. 90g)
- 1 stalk celery (ca. 50g)
- 2 cups chicken stock (ca. 500g)
- 5 cups water
- 1.75 cups yellow split peas (ca. 374g)
- 1 pig's trotter
Seasoning (for cooking)
- 1 tsp savory
- 1 tsp thyme
- 1 bay leaf
Seasoning (to taste)
- 1 tsp salt
- 5 grinds pepper
Instructions
- Melt the ghee (or butter) in the frying pan.
- Peel and dice the carrots to a suitable size and add to the pan. Do the same for the onion and celery.
- Add the chicken stock and water to the pan and bring to the boil.
- Add the split peas, pig's trotter, and cooking seasonings. Cover and reduce the temperature to simmer; stir occasionally to ensure the split peas do not stick to the pan and burn. If the soup becomes too thick, add water as necessary.
- Once the peas and meat are cooked, remove the pig's trotter and cut its meat into suitable chunks, then return them to the soup.
- At your option, purée a portion of the soup in order to make it somewhat thicker.
