Main ingredients
- 1.5 tbsp ghee (ca. 21g; or butter, if preferred)
- 2 carrots (ca. 276g)
- 1 medium onion (ca. 90g)
- 1 stalk celery (ca. 50g)
- 2 cups chicken stock (ca. 500g)
- 5 cups water
- 1.75 cups yellow split peas (ca. 374g)
- 1 pig's trotter
Seasoning (for cooking)
- 1 tsp savory
- 1 tsp thyme
- 1 bay leaf
Seasoning (to taste)
- 1 tsp salt
- 5 grinds pepper
Melt the ghee (or butter) in the frying pan.
Peel and dice the carrots to a suitable size and add to the pan. Do the same for the onion and celery.
Add the chicken stock and water to the pan and bring to the boil.
Add the split peas, pig's trotter, and cooking seasonings. Cover and reduce the temperature to simmer; stir occasionally to ensure the split peas do not stick to the pan and burn. If the soup becomes too thick, add water as necessary.
Once the peas and meat are cooked, remove the pig's trotter and cut its meat into suitable chunks, then return them to the soup.
At your option, purée a portion of the soup in order to make it somewhat thicker.
