Ingredients

Main ingredients

  • 1.5 tbsp ghee (ca. 21g; or butter, if preferred)
  • 2 carrots (ca. 276g)
  • 1 medium onion (ca. 90g)
  • 1 stalk celery (ca. 50g)
  • 2 cups chicken stock (ca. 500g)
  • 5 cups water
  • 1.75 cups yellow split peas (ca. 374g)
  • 1 pig's trotter

Seasoning (for cooking)

  • 1 tsp savory
  • 1 tsp thyme
  • 1 bay leaf

Seasoning (to taste)

  • 1 tsp salt
  • 5 grinds pepper

Instructions

  • Melt the ghee (or butter) in the frying pan.
  • Peel and dice the carrots to a suitable size and add to the pan. Do the same for the onion and celery.
  • Add the chicken stock and water to the pan and bring to the boil.
  • Add the split peas, pig's trotter, and cooking seasonings. Cover and reduce the temperature to simmer; stir occasionally to ensure the split peas do not stick to the pan and burn. If the soup becomes too thick, add water as necessary.
  • Once the peas and meat are cooked, remove the pig's trotter and cut its meat into suitable chunks, then return them to the soup.
  • At your option, purée a portion of the soup in order to make it somewhat thicker.
