Patta Gobi aur Mattar

A delicious cabbage (patta gobi) and pea (mattar) recipe, suitable for vegetarians and vegans, and curry lovers generally!

Equipment

  • Measuring spoons and cups
  • Frying pan and spatula

Ingredients

  • 4 tsp vegetable oil
  • 1 tsp cumin seed
  • 14 oz cabbage (ca. 6 cups) chopped
  • 1 large tomato chopped
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala
  • 1/2 tsp paprika
  • salt (to taste)
  • 1.5 cups petit pois (peas)
  • 1 large onion chopped (optional)
  • 1 hot pepper chopped (optional)

Instructions

  • Heat the oil in an electric skillet or other frying pan over medium heat; add the cumin seeds and fry for a few seconds or until the cumin begins to change colour.
  • Stir in the cabbage, tomato, other spices, and salt, as desired. Stir and cook for 5 minutes or so.
  • Add the peas and continue to cook while stirring occasionally, another 5 or so minutes, until the cabbage is tender but still crunchy and dry.
  • Remove from heat and serve.
